Ingredients:

• 4.4oz (125g) MouCo Camembert cheese, softened
• 4 oz (113g) cream cheese, softened
• 1 tbsp butter, softened
• 1 small white or yellow onion, finely grated
• 1 clove garlic, minced
• 1 tsp sweet paprika
• 1/2 tsp caraway seeds, crushed
• 1/4 tsp cayenne pepper (optional)
• 1 tbsp Bavarian Weiss beer (like Erdinger Weiss)
• Chopped fresh chives for garnish
• Pretzel crumbs or crushed pretzels for coating

Instructions:

1. In a mixing bowl, combine the softened Camembert, cream cheese, and butter. Mix until smooth and well combined.
2. Add the grated onion, minced garlic, sweet paprika, crushed caraway seeds, and cayenne pepper (if using) to the cheese mixture. Mix thoroughly until all ingredients are evenly incorporated.
3. Gradually add the beer, a tablespoon at a time, to the mixture until you achieve a smooth and creamy consistency. Adjust the amount of beer as needed.
4. Cover the bowl and refrigerate the Obatzda mixture for at least 2 hours, allowing the flavors to meld and the mixture to firm up.
5. Once chilled, take small portions of the mixture and roll it into bite-sized balls.
6. Spread the pretzel crumbs or crushed pretzels on a plate. Roll each cheese ball in the crumbs until evenly coated.
7. Place the coated balls on a serving plate or platter and sprinkle chopped fresh chives on top for garnish.
8. Serve the Obatzda balls with pretzels, bread, or crackers. They can be a delightful addition to a Bavarian-themed gathering or as a tasty snack for any occasion.

Enjoy your Bavarian Obatzda balls!
