MouCo Camembert is the cheese that started it all. When we launched MouCo in 2001, soft-ripened cheeses were nearly invisible in the U.S. market—but Birgit Halbreiter had grown up mastering them alongside her father in Bavaria. Camembert was the natural starting point. Creamy, nuanced, and slow to reveal its secrets, this cheese taught us how to combine European tradition with Colorado ingredients and intention.

What began as a single wheel in Fort Collins has become an award-winning signature. Our Camembert starts mild and buttery, then deepens into nutty, earthy complexity as it ripens. It’s a cheese that speaks gently, but leaves an impression—and it's still made the same careful way today, with fresh local milk and no shortcuts.
