Savory Baked ColoRouge Pastry

This was the hit of the MouCo Holiday 2009 Party, a play off an idea that a chef we work with came up with for the Rolling Stones when they stayed at his resort. 

The bacon works well with the earthy flavors of the red cheese and the green onion helps to brighten up the dish a bit
.

Directions:


It’s Really Very Simple Really

Fry up some bacon to your desired crispiness, then mince it.

For the last minute of the bacon fry, throw in some finely chopped green onion

Cut the top rind off a ColoRouge

Place the ColoRouge in the middle of a sheet of pastry dough

Cover the top with the bacon onion mixture

Close the pastry up around the cheese, the pastry should completely seal the cheese inside.


Brush with egg wash for color.


Bake at 450 for 20 minutes or so. The Idea is to get the pastry dough to finish quickly, the cheese will melt before that time is up.


Serve with fruit, bread or crackers for dipping into the molten cheese.

Sorry to hear it didn't go so well for you.

We chose the pastry dough instead of fillo because fillo is always so messy. In addition the pastry dough seems to bake a bit faster so that it doesn't get too soft during baking.

Don't worry if you have to make it over and over...we will make more..

well, i didn't have pastry dough (and didn't feel like making any) so i tried fillo dough and i don't think it worked so well.

i'm still thinking on it, though. it lacked something in terms of flavor and the dough might have been it, but ... well, to be honest, i think i like the cheese all by itself (with TLC crackers) best.

i may still try the recipe again with a different dough to see how that comes out.

Yum! I've got a colorouge in the fridge. Maybe I'll whip this up for an evening snack. (If I eat it before the kids get home I'll be in deep doo doo because colorouge is their favorite. So I'll have to wait until they're all home from school.)
