MouCo Camembert and Papaya Quesadillas

 Ingredients

 

  • 1 round MouCo Camembert cheese, chilled
  • Flour tortillas
  • 1 x Ripe papaya, (yellow and fragrant)
  • 1/2 x Red Onion
  • 1/2 x White onion
  • 1 x Roasted Hatch Chiles
  • Roasted Garlic
  • 2 tbl Oil
  • Chives

Directions

 

This recipe should be adjusted to your personal taste for heat and spiciness.

Marinate Chives in white wine for a day. Then grill for 5 minutes on a very hot grill over low flame.

Cut MouCo Camembert into strips.

Dice red and white onions. Peel and dice roasted Hatch chillies. If you don't have access to hatch chillis, canned green chillis will work great too, just drain them well.

Arrange a festive barrage of MouCo Camembert, chillis, onions, and Papayas onto the non-oiled side of the tortilla. We think it is best to use cheese at the bottom and top of the layer. This way it helps keep the quesadilla together a bit better for eating.

Flop another tortilla on your pile and lightly brush it with oil.

Carefully transfer your masterpiece onto a hot grill for a few minutes on each side until the cheese starts to melt.

Cut into triangles and serve with fresh fruits and salsas.
